This workshop explores the various microorganisms present during the winemaking process that can cause wine spoilage issues. The growth and occurrence of these microorganisms will be discussed as well as the specific spoilage issues that can arise from their growth in wine. A series of wine tastings will be used to illustrate taints that can be caused by specific spoilage microorganisms. In addition, the use and application of a microscope in the winery will be covered.
The workshop runs from 9:00 am until 5:00 pm with registration beginning at 8:30 am. Lunch will be provided.
