Cleaning and Sanitation - Examine  types of cleaners and sanitizers and at what temperature, time and concentration they should be used.  This session addresses what sanitizer is best for CIP, environmental applications, hand sanitizers, doorway sprays, etc., depending on the products you make and the organisms that cause you quality problems.  We also take a quick look at sanitation principles including order of cleaning, environmental cleaning and special applications.
